we’re getting to that time of year. the kids have been in school for 2 months, and the newness of the school year has worn off. mornings are a bit colder now and a bit darker. this means it is a bit harder to drag everyone out of bed in the morning, and even harder still to get them to the breakfast table.

showers drag on, and the cold mornings with still warm afternoons make outfit gathering a  v e r y  time consuming activity for the teens of the house. breakfast may be first on my  priority list for the morning, but i seem to be the only one in the house that feels this way.

skipping breakfast is not an option no matter how much they fight me on this, so at least once a week i make a batch of muffins for those days that the kids are literally grabbing something to eat as we are getting in the car. naturally they are more inclined to eat a muffin that’s loaded with chocolate like these banana muffins or these with zucchini. but with the cool fall mornings we have been loving these whole wheat apple oatmeal muffins. it’s probably all that delicious crumble.

naturally i would love for the kids to have a healthy well balanced breakfast before school every morning. eggs with some turkey bacon  or oatmeal and fresh fruit would be my ideal. but the way i see it these whole wheat apple oatmeal muffins have enough good to outweigh the sugar, and are far better than skipping breakfast entirely or the kids grabbing some random junk from the school vending machines mid morning.

Ingredients:

  • for the oatmeal crumble -
  • 1/2 cup whole wheat flour
  • 1/2 cup rolled oats (not quick cooking)
  • 1/2 cup brown sugar
  • 1/2 tsp salt
  • 1/3 cup butter, melted
  • for the muffins -
  • 1 1/4 cups whole wheat flour
  • 3/4 cups rolled oats
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 3/4 cup apple sauce, unsweetened
  • 3/4 cup buttermilk
  • 1/2 cup butter, melted and cooled
  • 1 egg
  • 2 tsp vanilla
   

Directions:

  • line a 12 cup muffin tin with liners
  • preheat the oven to 375 degrees
  • begin by making the crumble - combine the flour, oats, brown sugar, salt, and melted butter, stir with a fork and set aside
  • in a large bowl whisk together the flour, oats, brown sugar, baking powder, baking soda, cinnamon, salt, and nutmeg
  • in another bowl whisk together the applesauce, buttermilk, butter, egg, and vanilla
  • pour wet ingredients over the dry, and stir just until combined
  • spoon batter into the muffin tins - filling 3/4 full, and top with the crunble
  • bake 15-18 minutes until golden brown- pick in the center should come out clean

as our mornings continue to grow darker and colder, i know my breakfast situation isn’t about to change any time soon. grab and go may not be my breakfast ideal, but with options like these delicious whole wheat apple oatmeal muffins, the kids could do a whole lot worse.
