no st. patrick’s day menu is complete without the soda bread, and this whole grain irish soda is one of my favorites to serve

i have been making corned beef and cabbage every st. patrick’s day since ian and i got married. i have been making irish soda bread just as long. as far as bread making goes, it does not get any easier. no yeast. no mixer. kneading takes all of 30 seconds, and then into the oven your loaf goes.

you don’t even need a loaf pan. this bread can be baked on a baking sheet or in a cake pan. i actually use a greased pie plate.

the first few years i made irish soda bread using a recipe from my beloved fannie farmer cookbook [4]. then a few years later i started using a recipe from cooking light [5]. this one used oats and whole wheat flour. it was delicious, but used more ingredients than i  think an easy soda bread recipe should use. most home cooks do not stock wheat germ and wheat bran. but i did love the fact that is was a healthier whole grain version.

this whole grain loaf i think is a good combination of the classic with a bit of added nutrition from white whole wheat flour and irish steel cut oatmeal [6].

start to finish in under an hour, this whole grain irish soda bread should be a must bake this st. patrick’s day.

i know many of you do not keep buttermilk in the house, and that is no trouble at all. to make the two cups needed place 2 Tbsp white vinegar in bowl, add 2 cups of whole milk and let sit until it curdles – this should only take a minute or two at most.
