I made a promise to myself at the beginning of the year. This would be the year I get my weight under control. I was tired of trying on my own and never feeling successful.

As a food blogger, of course I love food. I love everything about it. Searching for recipes, shopping for the best ingredients, the cooking and photographing, and then yes the eating. But  I always felt my eating was healthy. I don’t drink my calories in sodas or fancy coffee drinks. I almost never eat dessert, and I don’t make a habit of snacking between meals. But i do love my pancakes for breakfast.

But over the past 5 years, my weight kept creeping up, and up. No matter how mindful I was about what I was eating. It should be easy right. More calories out than in. Easy. NOT so much.

So, two weeks ago I went to my first Weight Watchers meeting. The meeting was great and I plan to go every week, but really it has been the Weight Watchers app on my phone that has made the biggest difference.  Even things I had assumed were healthy…I’m looking at you granola and yogurt, are high in points if not done the right way. My favorite homemade granola [4] needs to be eaten in small amounts (1/4 cup compared to my 3/4 – 1 cup full)  to keep in the safe points zone. SO I load my bowl with berries and banana, top with some Greek yogurt and my 1/4 cup of granola.

But breakfast is my thing, and without pancakes life is simply not worth living. Getting a bit creative, I found a delicious and easy alternative to a very points heavy breakfast favorite. These 0 point pancakes are one of my favorite breakfast recipes.

2 egg whites (0 points) blended with 1 banana (0 points) + baking powder for a bit of rise, vanilla and cinnamon (all 0 points) = easy 0 point pancakes. Because the pancakes themselves are 0 points, I top them with 1 Tbsp of peanut butter and loads of fresh berries.

now you can have pancakes for breakfast and stick to your weight watchers points, this whole stack for 0 points!

Ingredients:

  • 2 egg whites
  • 1 banana - well mashed
  • optional -
  • 1/2 - 1 tsp baking powder
  • 1/2 - 1 tsp vanilla
  • 1/4 tsp cinnamon

Directions:

  • place ingredients in a blender jar, and blend until smooth
  • cook on a griddle preheated to medium
  • cook until bubbles form on the surface (about 2 1/2 - 3 minutes), flip and cook until the egg is fully cooked and the bottoms are golden (about 2 minutes)
  • serve with 1 Tbsp of peanut butter (3 points) and fresh berries
***edited - the new WW freestyle program has changed values some - even though vanilla is 0 points, when you use 1 tsp of vanilla this recipe becomes 1 point

the baking powder can be left out, but I like that it gives the pancakes a fluffier texture, more like the real deal. obviously, these will taste like banana, but if you love banana pancakes, you are going to love these.

don’t expect these to taste like the pancakes  you are used to, but they really are delicious and compared to the points in a regular stack  (they are 4 points each) these weight watchers 0 point pancakes cannot be beat.

So far, I am losing about 2 pounds a week (hoping for the same at my weigh in on Monday) and I have not felt deprived one bit. In fact, it has given me a new sense of creativity in the kitchen, and you can probably expect to see more weight watchers friendly recipes in the near future.
