We {more like me} are in a holiday frenzy.  With one birthday down, it’s now time to step it up.  I have most of my shopping done, but there is not a decoration in site.  We don’t even have a wreath on our door yet.

 We’re all headed out of town this weekend {albeit in different directions} so I’m trying to see how much I can squeeze into the next 48 hours.

That means no crepes for breakfast for the next few days, lunches will be bought at school and not packed, and dinner has got to be easy. It also has to be good so the kid’s don’t whine. I am SO not in the mood for that. When I’m rushing, I have zero patience, and I mean ZERO.

Lasagne is a meal that everyone likes, even the fussy one if it’s meat free.

I usually make my noddles and sauce, but yeah, that’s not happening this week.  My go to for store bought is always Barilla, and their oven ready lasagne works perfectly every time. No boiling means less prep-time, and for me that means more time to get holiday ready.

Vegetarian Lasagne


  • 1 box of Barilla Oven -Ready lasagne
  • 2 jars of Barilla Tomato basil Sauce
  • 1 8 oz ball of fresh mozzarella {sliced}
  • 3 cups of shredded mozzarella
  • 1/2 Parmesan cheese Grated
  • 2 cups of baby spinach leaves
  • 2 cups of cherry tomatoes {hallved}
  • 1 bunch of basil {chopped for garnish}


  • Pre-heat oven to 375
  • using a 9X13 baking dish, spread 1 cup of sauce on the bottom
  • top sauce with three sheets of the lasagne
  • pour on 1 cup of sauce, half of the fresh mozzarella, half of the spinach, half of the tomatoes, 1/3 shredded mozzarella
  • continue to layer
  • finish with 3 sheets of lasagna, the remaining sauce, shredded mozzarella, and Parmesan cheese
  • cover loosely with foil and bake for 25 - 30 minutes
  • remove the foil and bake an additional 5 minutes just to brown the cheese
  • let the lasagna sit for at least 10 - 15 minutes before cutting

With just a little bit of prep work, and 30 minutes in the oven, dinner is on the table.
