my daughter has decided to become vegan. she’s never liked meat, unless it’s bacon. eggs never really appealed to her either. it wasn’t that drastic of a change, until you look at how many of her favorites contain butter, milk, or cheese.
needless to say, we have been experimenting. a lot.
some recipes have been successful, others not so much. these vegan chocolate chip cookies were a home-run. crispy on the edges, chewy in the middle, and loaded with chocolate, they are everything you want a chocolate hip cookie to be.

vegan chocolate chip cookies
Ingredients:
- 2 cups of flour
- 1 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1/2 cup Refined Coconut Oil
- 3/4 cup brown sugar
- 1/2 cup sugar
- 1 tsp vanilla
- 1/4 cup almond or cashew butter
- 1/4 cup non-dairy milk (i used almond)
- 1 1/2 cups Guittard 63% Extra Dark Chocolate Chips
or other bittersweet or dark chocolate chips
Directions:
- preheat oven to 350°
- line baking sheets with parchment paper
- in a large bowl whisk together the flour, baking powder, baking soda, and salt
- in the bowl of a mixer, use the paddle attachment to cream together the coconut oil, and sugars
- add the vanilla, almond butter, and milk
- gradually add in the flour mixture (if the dough is crumbly add a Tablespoon or two of nut milk) and mix until combined
- fold in the chocolate chips
- spoon dough by the tablespoon and place 2 inches apart on prepared baking sheets
- bake cookies 12-15 minutes
- cool on baking sheet 5 minutes, then cool on rack

I like the taste of these cookies, it’s fat from peanut butter, it’s not only nice flavor but also good for health. The vanilla highlights the flavor. This is wonderful for a tea break!
Tasty and good. I make a cottage cheese dip with just cottage cheese and salsa. Very good on tortilla chips but on veggies too. Amazing food.
Absolutely delicious !!! I’ve made them a couple of times and I used about half the amount for sugar. I tried making them healthier by using stevia instead of white sugar, coconut sugar instead of brown sugar and applesauce instead of oil (I still added a few tablespoons of coconut oil to avoid stickiness) and it came out great <3. I love vegan chocolate chip cookies ^^
