Triple Berry Banana Bread

Triple Berry Banana Bread

I have always loved the 4th of July.

When we were kids we never missed the parade, and my family always had a HUGE party complete with fireworks that would usually knock out the street lights.

We took our holidays very seriously.

As it turns out, the 4th of July is also my wedding anniversary.

That was not my intention, but when you have your heart set on a location, and another couple swoops in to steal your date, you settle for the next available, and that just happened to be the 4th of July.

It actually works out pretty nicely, because Ian always has the day off.

We may not be knocking out streetlights {we actually don’t have any} with our sparklers, dancing butterflies, and roman candles, but we sure can make the day fun.

And what fourth of July would be complete without the red, white, and blue.

This banana bread may not be white-white, but with raspberries, strawberries, and blueberries, we’ve got the other colors covered.

I found the cutest  mini red and white loaf pans, so I made three small loaves, but you can bake in a standard size bread pan for one large loaf {just bake for the full hour}

  • 3 ripe bananas mashed
  • 2 eggs {beaten}
  • 2 cups of AP flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 cup of strawberries {hulled and quartered}
  • 1/2 cup of blueberries
  • 1/2 cup of raspberries

  • Pre-heat the oven to 350
  • grease your loaf pan/pans
  • combine the bananas and eggs
  • stir in the flour, salt, baking powder, and baking soda
  • gently fold in the berries { it helps to toss the berries in a little flour to keep the colors from bleeding through the batter}
  • pour the batter into the pan/pans
  • bake 1 hour for a standard loaf, or 25 - 30 for the mini loaves
  • remove from the pan and cool on a rack

Red and Blueberry banana Bread

I could eat banana bread every morning for breakfast, warm with a little butter…YUM!

To be even more festive enjoy it with a red white and blue smoothie.
