not only are crepes my all time favorite breakfast, they make a delicious dessert too

crepes are one of those things that I could eat morning, noon, and night and never get bored

sweet or savory it doesn’t really matter

we usually have them for breakfast with fresh fruit or syrup

 sometimes both

but I also love them filled with cheese and any leftover meat and veggies we have in the fridge

the kids will even grab one to snack on completely plain

but these tiramisu crepes are my new favorite way to enjoy them

I cannot remember the first time I had tiramisu, but I do know it was love at first bite. Along with creme brulee, it is at the top of my favorite dessert list. Strangely, it is one dessert that I have never even attempted to make at home.

So when I found myself craving tiramisu but not wanting to leave the house in search of lady fingers, I improvised

with a little espresso powder in the crepe batter, sweetened mascarpone for the filling, whipped cream and some cocoa on top, I had all the flavors that I love in tiramisu in a delicious  dessert crepe

Yield: 8 - 10 crepes

Ingredients

  • for the crepes -
  • 1/2 cup cold water
  • 1/2 cup milk
  • 2 eggs
  • 1/4 tsp salt
  • 1 Tbsp sugar
  • 3/4 cup flour
  • 1 tsp espresso powder
  • 2 Tbsp butter, melted
  • for the filling -
  • 8 ounces mascarpone
  • 1/4 cup powdered sugar
  • 1 tsp vanilla
  • topping -
  • whipped cream
  • cocoa powder

Instructions

  • in a blender jar add the water, milk, eggs, salt, sugar, flour, espresso powder, and finally the butter
  • blend until smooth - scrape down the sides to incorporate any flour "clumps" on the sides
  • cover and chill at least 30 minutes
  • beat together the mascarpone, powdered sugar, and vanilla - set aside
  • heat your crepe pan or skillet over med-high heat (butter pan if needed)
  • pour 1/4 cup of batter in the well heated pan
  • immediately tilt pan in all directions to cover the bottom with batter
  • return the pan to the heat for about 1 minute
  • carefully lift the edge with a spatula to check for a light brown color
  • flip when ready, and cook on the bottom for about 30 seconds
  • repeat with the remaining batter
  • allow crepes to cool slightly
  • fill each with a heaping tablespoon of the sweetened mascarpone
  • fold crepe in half over the filling, and then in half again to form a triangle
  • top with whipped cream and cocoa powder
