Growing up in  Buffalo,New York, snow suits, snow forts, ice skating in the backyard, and hot chocolate with marshmallows were standard operating procedure for  cold winter days.

We always had homemade hot cocoa mix in the cupboard, and I usually have a homemade mix {like this healthier version} in the pantry, although my kids are addicted to the hot cocoa for the Keurig. Fast and easy is where it’s at. But I am NOT a fan of hot cocoa made with water. Never have been, never will be. It has to be milk, and even better… cream. Creamy hot cocoa is the only way to go.

Unfortunately, cream with your hot cocoa may be delicious, it also  has a tendency to pack on those winter pounds.  Fine if you plan to hibernate for the winter, but  that doesn’t really  fit into my plans. So no cream for me.

Then, I tried Silk Cashew milk. I don’t have anything against dairy, cheese and I go WAY back,  but the Silk Cashew Milk is SO creamy, and get this, cashew milk only contains 25 calories per serving. There are 83 calories/serving in skim milk, and hello skim milk is NOT creamy in the least. Whole milk has 148 calories/serving, and cream, forget about it, I don’t even want to know. (if you do want to know get ready for it….821 calories with 88 grams of fat) YIKES

I’ve been using  the unsweetened cashew milk with my morning granola, and sweetened in my coffee,and then it hit me. I bet it would make one creamy cup of hot cocoa.

I made this cocoa in my blendtec using the soup setting (but you could easily make it on the stove top) – creating a steamy cup of rich and creamy cocoa using only two ingredients. 1 cup of Silk Cashew Milk and 1/4 cup of dark chocolate chips

  • 1 cup of Silk Cashew Milk (unsweetened)
  • 1/4 cup chocolate chips (I prefer dark, but use whatever you like)


  • in a small saucepan warm milk over medium heat, and then stir in chocolate chips
  • whisk vigorously until the chocolate melts

If you do have a blendtec, I strongly suggest you try the soup setting to make hot cocoa. It gets SO creamy and thick, it’s like drinking a chocolate bar.
