Tea and Crumpets

tea and crunpets   Our home is pretty even, two boys, two girls {including us parents} but with a teenage son, and a husband that usually acts like a teenager himself, it doesn’t always feel like it. Girl time is hard to come by. This week Charlie is at basketball camp ALL day. Ian, of course, is at work, and that means Stella and I have real quality girl time. We’ve been giving each other DIY facials, getting our nails done, and have been creating like crazy in the kitchen.    crumpets   Today we made crumpets–something I have wanted to make for years. Ian and I used to live across the street from the most darling tea and crumpet shop. It was actually named Tea and Crumpets. Seeing as how Ian’s dad is from England, it quickly became one of our favorite spots. You could even watch from the window as they made the crumpets.  It was a first for me, but they were delicious. You could have them more traditional with jam, clotted cream, or curd, or go for a crumpet with egg, cheese, and any number of savory toppings. We pretty much ate there every weekend, and then we moved, and I have not had a crumpet since. While shopping, I came across a “new to me” sugar from British brand Tate+Lyle® ; crumpets was the first thing that popped into my mind.  So Stella and I made crumpets, and tea, and cucumber sandwiches, and we drank with our pinkies up, and have enjoyed every minute of “girl” time. {except Finn decided he wanted to crash our girls only tea}   Finn wants a crumpet

  Crumpets: 1/2 warm water {110 degrees} 1 envelope of active dry yeast 2  tsp Tate+Lyle®  Organic Pure Cane Sugar 1 1/2 cups AP flour  1 tsp baking powder 3/4 cup milk In a large bowl stir  the sugar into water, and sprinkle on the yeast, and let it sit for about 5 minutes. Mix in the flour, baking powder, and milk. Cover and let rest 30 minutes. Prepare your crumpet rings {or round cookie cutter} and griddle by spraying with non-stick cooking spray. Pre- heat the rings and griddle {use a med-low setting} My cookie cutters are 3 inch round, and I used 3 Tbsp batter per ring. Cook until the top is covered with bubbles {about 10 minutes} Remove the ring, flip, and cook to brown the underside {another 2 – 3 minutes} Repeat with the remaining batter – this recipe made 8 crumpets
