There are about a million different ways to make a brownie.

There are fudgy brownies, cakey brownies, brownies with flour, and brownies without. Some brownies  are made healthy with black beans;  I’ve even made brownies with avocado, sounds strange, but they were delicious.

But brownies with sweet potato, this was a first.

I first found this recipe on Deliciously Ella.

and while it may sound odd (although not nearly as odd as black bean brownies I think)

I ADORE sweet potatoes, and  always have a few in the pantry.

I couldn’t wait to try them.

I decided to bake my sweet potato; I find they are much sweeter versus steaming them. The sweet potato is then peeled and pureed with the dates. I don’t usually have buckwheat flour at home, so I used almond meal and coconut flour – my go to combination for wheat free baking. You  could also use brown rice flour.

The recipe also calls for cacao, which is raw and much less processed than cocoa powder. It is the purest form of chocolate you can consume, and is one of the best sources of antioxidants.  Raw cacao  has a much  stronger taste – if you are making the brownie bits with cocoa powder, you will want to double the amount you use.

I baked the brownie bites in a mini-muffin pan, but you could easily double the recipe and bake them in a standard square baking dish.

  • 1 large sweet potato baked (450 F for 1 hour)
  • 16 dates, pitted
  • 2 Tbsp raw honey
  • 1 tsp vanilla
  • 4 Tbsp raw cacao
  • 1/2 cup almond meal
  • 1/3 cup coconut flour
  • 1/2 tsp salt


  • pre-heat oven to 350 F
  • spray mini muffin pan with non-stick cooking spray
  • peel your baked sweet potato
  • in a food processor puree the sweet potato with the dates until you have a very smooth paste
  • stir in the vanilla and honey
  • add the sweet potato puree to a bowl and stir in the cacao, almond meal, coconut flour, and salt
  • using about 1 Tbsp of batter, roll into a ball, and press gently into each of the muffin cups (you should get 16 - 18 brownies bites)
  • bake @350 for 15 minutes
  • cool


I’m completely aware that these will not taste like a bakery shop brownie, but they are good, and they are good for you, and they’re chocolate.
