Stuffed Artichokes

I’ve mentioned  {quite a few times} that it is not always easy getting my family to eat veggies.

I LOVE vegetables!

One that we can all agree on is the artichoke.

Usually, I’ll just steam them, and serve with a bit of lemon juice and olive oil.

Tonight I wanted to try something new, and I stuffed them.

There were mixed reviews from the kiddos, but I thought they were delicious.
It was easy too – which is always a plus.

To do:

In a food processor combine 4 – 6 cloves of garlic
1/2 cup of Parmesan cheese
1 cup of breadcrumbs (I used panko)

Pulse just to combine everything

Cut off the stems to square the bottoms
Trim the top 1/3 off the artichoke
rub the cut ends with lemon juice

separate the leaves to allow room for the stuffing


sprinkle with a tsp of salt and a dash of pepper
drizzle with a few tbsp of olive oil

add an inch of water to the baking dish
cover and bake @425F for about 45 minutes

they will be golden and delicious
