Strawberry Vinegar Caramel Sauce


Because our weekday mornings are less than relaxing, I like to make an extra nice breakfast on the weekends.

Crepes, waffles, french toast, or pancakes are our weekend go-tos.  Of course my kids prefer when chocolate is involved like these chocolate hazelnut  stuffed crepes, but for me…I like it fruity.

I found a terrific berry and vinegar sauce recipe in  bon appetit, made a few minor tweaks, and  voila, my new favorite pancake, waffle, crepe, or even ice cream topping.  Stella seems to like it on a spoon.

Strawberry-Vinegar Caramel Sauce


  • 1 cup of sugar
  • 1/2 cup of white balsamic vinegar
  • 2 cups of hulled and halved strawberries


  • cook the sugar over medium heat {do not stir}
  • once the sugar begins to turn brown around the edges, stir to blend in the melted sugar
  • stir occasionally until the sugar is completely melted, and turns dark amber in color
  • remove the caramel from the heat, and carefully add in the vinegar {it will bubble and seize}
  • add the berries, return to medium heat, and stir occasionally until the fruit becomes soft, and the caramel has once again melted {bout 10 minutes}
  • cool completely before covering and chilling

This topping is a terrific way to use all of the gorgeous spring berries, and the vinegar adds just a bit of tang.
