Strawberry {shortcake} Cupcakes

I, like MANY others, have a bit of a crush on Ree Drummond.

Food From My Frontier is SO beautiful that even my daughter cannot put it down.

The first recipe she wanted to try was the strawberry shortcake cake.
I don’t do layer cakes all that well.
Also, Stella does not like cream cheese frosting (not sure how that is even possible).

With a few minor adjustments, strawberry shortcake cupcakes were born.

 ~recipe adapted from Ree Drummond

For the cakes:
beat together 1 stick of butter and 1  1/2 cups of sugar
add in 3 eggs (one at a time) and 1 tsp vanilla
add 1/2 cup of yogurt
mix just until everything is combined
sift in 1 1/2 cups of flour
3 tbsp cornstarch
1 tsp baking soda
1/2 tsp salt

Berries:
wash, hull, and halve 1 pound of strawberries
mash with fork

sprinkle on 2 tbsp of sugar

line muffin tin
add a small scoop of batter

top with a scoop of berries

top berries with batter

bake @350F for 20 minutes

cool

top with whip cream (we whipped our cream with a bit of the reserved berry juices)
