My Stella, she’s the child I lovingly refer to as the fussy one. It’s easier to list what she does eat instead of ALL she doesn’t. Her will not eat list seems to grow by the day.

Breakfast is her favorite meal of the day, but even that can be tricky. She would love nothing more than to eat pancakes and waffles every single morning. Of course these are Charlie’s least favorite breakfast items; he’s and egg and meat eater in the morning. The bacon and egg tart has been requested MANY times recently. but if I make pancakes or waffles, he does eat them, maybe not joyfully, but he eats.

I cannot expect him to eat the same old pancakes and waffles each and every day, so I have been trying to get creative this summer. The Reese’s peanut butter pancakes were obviously a HUGE hit.  S’more waffles too, what’s not to love. But with summer berries in full swing, how can you not want to use them in everything.

I had been wanting to try ricotta pancakes for  LONG time, but I only had mascarpone; close enough for me, and I threw in poppy seeds just cause it sounded like a good idea.

BEST pancakes ever. Seriously, why have  I not thought to use cheese in pancakes before. They were the creamiest, most delicious pancakes I have ever eaten, even better than the blueberry buttermilk that used to hold first place in my mind.

Unfortunately, Stella loved them too, so much that these are all she wants for breakfast




Charlie is not thrilled.

Strawberry Mascarpone Poppy Seed Pancakes


  • 1 cup flour {I use King Arthur AP flour}
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 Tbsp sugar
  • 1 Tbsp poppy seeds
  • 1 egg
  • 1 cup of milk
  • 1 tsp vanilla
  • 1/2 cup of mascarpone {or ricotta}
  • 1 cup of diced strawberries


  • heat your griddle or skillet to med-low {300 degrees}
  • combine all of the dry ingredients
  • whisk together the egg, milk, vanilla, and mascarpone
  • pour over the dry ingredients and stir just to combine
  • gently fold in the strawberries
  • pour batter onto griddle {I used 1/4 cup for each pancake}
  • cook 5 minutes on each side

These pancakes are great with maple syrup, but of course  I think even better with homemade strawberry syrup.
