Strawberry and White Balsamic Vinaigrette

For my family,

salad is the best way to make sure my kids are eating their veggies.

Typically, I’ll make a salad at least five times a week.

Stella loves to help as well,

and a lot of times she actually decides what to put in it,

and the dressing that we’ll make to go on top.


Her favorite is strawberry vinaigrette.

We’ve purchased a number of different brands,

but most of them are simply too sweet for me.

Whole Foods has had GORGEOUS berries lately,

so  I decided to make my own vinaigrette.

in a word…


not too sweet

not too sour

very berry

and the perfect dressing for a spinach, strawberry, and goat cheese salad.


{and it’s easy to do}

Strawberry Vinaigrette

2 cups of quartered strawberries

3 tbsp of white balsamic vinegar

4 tbsp of olive oil

salt and pepper to taste

place the berries, oil, and vinegar in a blender

pulse until smooth

{about 10 seconds}

add the seasoning to taste
