It seems like such a FUN idea

Sleeping in

Staying up late

Lazy days spent at the pool

Campfires and s’mores

and it is fun, for about a minute

and then I realize that getting Β any kind of work done means I need to be up early, before the kids, because the minute they get up the bickering starts

they eat non stop which means my kitchen is in a constant state of disarray

there are “things” left out all over the house, and no one seems to know how they got there

and I cannot get a moments peace, unless I hide in my bathroom

Summer vacation is hard work, and this breakfast is just the fuel you need to conquer the day, no matter what gets thrown your way, and in my house, things really do get thrown Β – usually in the direction of the older brother’s head.

Steel Cut Oat Porridge with Berries, Honey, and Chia Seeds

Steel Cut Oat Porridge with Strawberries and Honey


  • 1 cup of unsweetened almond milk
  • 1/2 - 1 cup of water {I like a very thick porridge so I only use 1/2 cup}
  • 1/2 cup steel cut oats {ground in a food processor or coffee grinder}
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • fresh berries sliced, honey and chia seeds for topping


  • bring the milk and water to a slow boil
  • stir in the processed oats, vanilla, cinnamon, and salt, and continue to stir while it boils gently
  • it will thicken up quickly {only a few minutes}
  • top with honey, berries, and 1 Tbsp of chia seeds if desired

All kidding aside, we do love summer break, it’s just Β not much of a break if you’re the mom; I guess our break starts the first day of school.
