Sponge Candy

This is the post that almost wasn’t,
but I do NOT like to quit.

I’ve used entirely too much sugar and corn syrup in the last two days,
my kitchen is shimmering with a lovely sugar gloss,
and my fingertips are slightly burned.

However, I successfully {after 4 failed attempts}
made sponge candy.

Seeing as I am definitely NOT a science person, I’m not really sure what possessed me to try this experiment.

My first batch not only burned, but once I added the baking soda, it overflowed.  ALL over.
Messy yes…but it looked pretty cool.

After a few additional failures, the final candy was perfect!

A lot of work, but delicious.

Next year I might just leave the work up to Fowler’s.


Sponge Candy


  • Sponge Candy:
  • 1/4 tsp gelatin
  • 1 tsp water
  • 1 1/2 cup sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water


  • sprinkle the gelatin over the water and let sit until you are ready to use it
  • butter an 8 inch square glass baking dish
  • heat the sugar, corn syrup, and water over medium heat
  • once it begin to boil, stir frequently
  • you will want to add the gelatin once the sugar is about 285 degrees
  • this will bubble up
  • whisk and turn off the heat
  • wait a few minutes and then whisk in 1 tbsp of baking soda
  • this will bubble as well
  • quickly empty the mixture into the prepared pan
  • {do NOT spread as this will pop the bubbles}
  • allow to cool completely {about 2 hours}
  • and then break into pieces


you can eat it as is
dip in chocolate

{definitely better in chocolate if you ask me}
