So this may come as a shocking bit of info, but if it’snot in the house, you can’t eat it.

Earth-shattering I know.

I try to get as much of my work done as I can when the kids are not at home, so when they are  at home, I’m available to them if they need. That and they tend to get into trouble when they know I’m not paying attention.

This means I pretty much work through breakfast and lunch, and end up snacking during the day.  What I’ve noticed is that I grab what is fast and available, not necessarily what is good for me.  And when you spend a LARGE part of the day sitting at the computer,  well those calories are hard to hide.

Seems pretty simple, but it’s not something I used to think about when I did the shopping. Sure we had plenty of things for breakfast, lunch, and dinner, but snacks never really made it on the list, unless it was something for the blog. But a few weeks ago, Stella and I were at a cookie decorating class, offered by the uber talented Glory from Glorious Treats. It was the most fun afternoon, and she even had snacks 🙂  Good healthy snacks, and that’s when it hit me.  I like healthy food, some I even LOVE like the spicy red pepper hummus she served with bell pepper strips.

Right then and there I decided to stock the fridge with fast, easy, and healthy snacks that I can grab and get back to work quickly.

Nuts, berries, Greek yogurt, and pre-cut veggies are a few of our favorites.

And this hummus…I could eat it everyday, although now that the kids are home for the summer, I’ll have to share, and my goodness they can eat a lot!

 

 

 

Spicy Roasted Red Pepper Hummus

Ingredients

  • 1 Red bell pepper
  • 1 Jalapeno
  • 1 can of chickpeas {drained}
  • 1/4 cup tahini
  • 2 cloves of garlic {minced}
  • juice from one lemon
  • 1 tsp salt
  • 2 Tbsp olive oil

Instructions

  • Begin by roasting the peppers -
  • cut each pepper in half, remove the seeds
  • place cut side down on a baking sheet, and broil on high about 8 minutes
  • place the peppers in a brown paper bag, fold closed, and allow to cool at least 10 minutes}
  • remove the skins from the peppers
  • combine the peppers and remaining ingredients in the bowl of a food processor, and pulse until smooth
