we’re right in the middle of spring break week. because we traveled at christmas and ian’s shop is crazy busy right now, we’re enjoying spring break at home.

we’ve done a bit of spring/summer clothes shopping, saw allegiant, but mostly the kids have been busy with their friends. having teenagers has definitely been an adjustment. i am so used to the kids constantly needing me for things. it feels weird to have them so independent and barely home.

it has given me loads of time this week to get busy in the kitchen, and that has been fun. it’s amazing what I can get accomplished when I am not carpooling three times a day. while i was cleaning out the pantry (and man did that need to happen, i am shocked by how quickly things collect in there) i found the last of my theo spicy chili chocolate bars; i thought those were long gone. chocolate doesn’t usually last very long around here, but when I find some, then it means it is time to make some brownies.

spicy chili chocolate brownies

Prep Time: 15 minutes

Cook Time: 30 minutes

Yield: 16 brownies

Serving Size: 1 brownie


  • 1- 3 ounce spicy chili dark chocolate bar
  • 4 Tbsp butter
  • 3/4 cup of sugar
  • 2 eggs
  • 1/2 tsp cinnamon
  • dash of salt
  • 1/2 cup flour
  • 1 tsp vanilla


  • preheat the oven to 300 degrees
  • line an 8 x 8 baking pan with foil, and spray with nonstick cooking spray
  • in a small saucepan, over med-low heat melt the butter and chocolate, stir and allow to cool slightly
  • in the bowl of a stand mixer beat the eggs and sugar until light (6-8 minutes)
  • add in the cinnamon,, salt, flour, vanilla, and melted chocolate
  • spread batter into the prepared pan and bake for 30 minutes
  • cool 5 minutes, and then remove from the pan to complete cooling on a rack
  • when completely cool, cut into squares
  • dust with powdered sugar

*if you cannot find a spicy chocolate bar, add 1/4 – 1/2 tsp cayenne pepper along with the cinnamon

these spicy chili brownies are rich and chewy with just a hint of heat, and the best way I can think of to spend a quiet afternoon. just me, my tea, a good book, and a brownie or two
