sometimes you just need a cookie, and when you do, make a batch (or three) of these
soft baked chocolate chocolate chip cookies
It’s about that time of year.
The kids have been back in school for 2 months, and I am running out of lunch box ideas.
Of course the kids would be fine if I decided to fill their bags up with chips and store bought cookies, and yes those items do find their way into the house from time to time; easy as that may be I prefer to NOT do that.
But the apples and carrots and tomatoes are much more likely to get eaten if a treat is included in the bag as well.
Soft baked cookies like these pumpkin and these chocolate chip are our absolute favorite.
They are SO soft even days later (not that they will last that long), but I could probably add double the amount of chocolate chips and they still would not be chocolaty enough for my gang.
These soft baked chocolate chocolate chip cookies are definitely for the chocolate lover. They’re like a soft and fudgy brownie meets chocolate chip cookie. Even this non-chocoholic loved them, and that is saying a lot.
Ingredients
- 2 cups flour
- 1/2 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup of butter, softened
- 1 cup of brown sugar, packed
- 1/2 cup sugar
- 1/4 cup light corn syrup
- 2 eggs
- 1 1/2 tsp vanilla
- 2 cups chocolate chips
Instructions
- heat oven to 350 degrees
- sift together the flour, cocoa powder, baking soda, baking powder, and salt - set aside
- cream together the butter, sugars, and corn syrup until light and fluffy
- add eggs one at a time, and then add vanilla
- gradually add in the flour, and gently fold in the chocolate chips
- scoop dough by the tablespoon, and place 2 inches apart on a parchment or silpat lined baking sheet
- bake at 350 for 10 minutes
- cool on baking sheet 3 minutes, and them remove to a rack to complete cooliung
** do NOT over-bake these, the cookies should be just set in the center and still have a glossy look to them

Ohhh yeah, these are my type of cookies! I am with you! I feel I am getting less creative with my daughter’s lunch box. They have rules at the school for “no unhealthy snacks.” Basically they prefer no cookies and such but come on, a kid needs a treat once in a while!
