Snickers Pudding Parfaits

Many things have changed since I first started blogging. We’ve moved, twice. My elementary schoolers are now middle and high schoolers. We added a dog, or two. bunnies, and even some chickens to our clan. And I learned that I enjoy the photography part of my job almost more than the cooking and eating part.
Almost.
The more I learn, the more I am reminded how much I need to learn.
One thing that has not changed a bit is my love for pudding. And yes, from time to time you will find a box or two of Jello pudding in my pantry, but nothing comes close to homemade pudding. My family is all about the chocolate, but my true love is vanilla. That is unless you pair chocolate with caramel and peanut butter puddings. Then you have a snickers bar pudding combination that cannot be beat.
The idea first came to me when I saw these layered peanut butter and chocolate lovelies at Joy the Baker. It’s a pudding peanut butter cup, and while I LOVE a Reese’s, Snickers are the bars I sneak out of my kids Halloween candy buckets. So to the chocolate and peanut butter pudding layers I went and added a third caramel layer.

Ingredients:
- Chocolate Pudding
- 1/3 cup of packed brown sugar
- 2 tbsp cornstarch
- 2 tbsp cocoa powder
- 1/4 tsp salt
- 2 cups of whole milk
- 1/2 cup heavy cream
- 1/4 cup of chopped dark chocolate
- 2 tsp vanilla
- Caramel Pudding
- 1 1/2 cups whole milk
- 1/2 cup heavy cream
- 2 tbsp cornstarch
- 1 tsp vanilla1/4 tsp salt
- 1/2 cup sugar
- Peanut Butter Pudding
- 1/3 cup of packed brown sugar
- 2 tbsp cornstarch
- 1/4 tsp salt
- 2 cups of whole milk
- 1/2 cup of heavy cream
- 1/2 cup of all natural creamy peanut butter
- 2 tsp vanilla
Directions:
- in a large saucepan whisk together the sugar, cornstarch, cocoa powder, and salt whisk in the milk and cream and place over medium heat until it begins to simmer
- once the pudding begins to simmer, whisk constantly for about a minute while it thickens
- off heat whisk in the vanilla and the chopped chocolate whisk until the chocolate has melted
- pour into four glasses, cover and chill
- make the caramel layer next
- in a bowl whisk together 1/4 cup cream, cornstarch, vanilla, and salt set aside
- in a large saucepan heat the sugar with 3 tbsp water DO NOT STIR cook over med-high heat until the sugar becomes amber in color, but watch it closely - it burns easily
- off heat gradually whisk in the milk and remaining 1/4 cup cream return the pan to the heat, and cook over medium until the caramel has completely dissolved into the milk, and the pudding begins to thicken a bit, this may take to 10 minutes whisk in the cornstarch mixture, and continue to stir for about a minute
- layer this over the chocolate pudding and return to the fridge
- make the peanut butter layer
- in a large saucepan, whisk together the brown sugar, cornstarch, and salt whisk in the milk and cream heat on medium, and bring to a simmer whisking occasionally
- After it begins to simmer, whisk continuously for about a minute, as the pudding begins to thicken Off heat whisk in the vanilla and the peanut butter.
- layer on top of the caramel, and chill at least 2 hours before serving
Do NOT attempt to multitask this one. Make one flavor at a time. Trust me on this.
The firs time I made these, I added the peanut butter layer first, this time though I started with chocolate ending with peanut butter. Of course, you can layer your parfaits any way you choose.

Smooth, creamy snickers? I’m sold. I was really hoping I would read down the recipe and find that I could cheat and do some of the whisking in the electric mixer, but all the whisking is done on or right off the stove. (sigh). Cookie baking has turned me into a whisk wimp. 🙂 I am off to make pudding. Thanks for the recipe!
