My stand mixer gets a workout, and I love and appreciate how hard it works. But I get absolutely giddy when it’s time to break out my slow cooker. I’d probably use it all year, but my husband has a major man crush on his grill. SO, we compromise. He gets spring and summer, and Saturdays during the fall and winter for the grill, and I get the rest to roast and slow cook.
Nothing makes me happier than to have dinner ready first thing in the morning, although my kids don’t love the smell of onions and garlic with their pancakes.
Soup and chili are what you will usually find in my slow cooker, and this buffalo chicken chili is a new family favorite. We like it spicy, but you can reduce the hot sauce added. I like to use 1/4 cup for cooking and then serve extra sauce at the table. I have made it using 1/2 cup, and while I and and I loved it the kids were not as enthusiastic.
Served with jalapeno cornbread, this chili is football food done right for this Buffalo girl.
Ingredients
- 1 large onion, diced
- 3 cloves of garlic, minced
- 3 carrots, diced
- 3 celery stalks, diced
- 2 lb chicken breasts
- 1- 28 ounce can diced tomatoes, drained
- 3 cups of chicken stock
- 1/4 cup hot sauce {I used Tabasco}
- salt and pepper to taste
- crumbled blue cheese for topping
Instructions
- place onions, garlic, carrots and celery in the bottom of the slow cooker
- top with chicken, tomatoes, stock, and hot sauce
- add 1 tsp salt and 1/4 tsp pepper, stir
- cover and cook on low 6 hours
- shred chicken and return to chili
- season to taste
- serve with extra hot sauce and blue cheese crumbles

Sweet & Sour meatballs always come to mind….they are such easy, classic party/get-together comfort food. And the best part is they stay hot if you serve them in the slow cooker (mine is so old it’s getting embarrassing to do that though LOL)

Well, I’ve been wishing for a slow cooker for quite a while, along with a Kitchen Aid stand mixer. At 61, I’m running out of time! This would be great. Had one years ago, not quite as nice as this one, and it was fun to use as well as making life a bit easier. Believe my favorite meal in this slow cooker would be a Verde Chicken and Rice. Then, maybe I would try some kind of dessert. I’ve seen them cook a beautiful cake in one. Thank you for the opportunity to enter this contest. The chili pictured on this page is very pretty though. I’d give it a try for sure.

My favorite is my chicken tacos. They are fabulous. Except last time I made pinto beans and a ham shank it was the best thing I have had in ages.

I love making clam chowder. My crock pot was originally a gift to my mother when I was a teanager. She gave it to me about 7 years ago. My daughter is currently borrowing it. Its great to know that it has lasted over 30+ years! I would love to win one to give to my dauiighter so I can get mine back.
