Slow Cooker Balsamic Chicken
Back to school time does not just mean early mornings; it’s also the beginning of the crazy activity schedule.
Ours has already started with football practice four afternoons a week.
Time to break out the slow-cooker.
I love when I can throw ingredients in a pot in the morning, and know that when we return home, dinner will be waiting for us.
Typically, I don’t even measure.
This meal was so easy to put together, and it was delicious. The kids gobbled it up, and I enjoyed the leftovers for lunch.
1 lb of chicken breasts
1 red onion sliced
3 – 4 sliced Roma tomatoes
salt and pepper to taste
Drizzle the olive oil in the bottom of the slow cooker
add in the seasoned (with salt and pepper) chicken breasts
top with onion and tomatoes
finally add a good size drizzle of balsamic (about 1/3 – 1/2 cup)
cover and cook on low 6 – 8 hours
we served ours over orzo pasta
and of course added a sprinkle of Parmesan
but it would be great with any pasta or even rice
