Skinny Wednesday ~ Coconut Latte




I really wish I could tell you that I LOVED to exercise.  I LOVE the feeling after I exercise, but the actual exercise NOT so much.

Every night I have good intentions to wake up early and get  my run in before the kids are awake. Then, the alarm goes off, and I am too tired to get out of bed.

On the rare occasion that I do get  up early, my workout doesn’t go well because I end up hungry without energy. But eating requires getting up even earlier, and that is NOT going to happen.

Coffee, now that I can make happen.

The other night I attended the book party for Mindy Cone’s {she’s the talent behind Creative Juice} Macarons.  Not only was the party gorgeous, I met so many wonderful bloggers, party planners, and cookie decorators. One very talented cookie decorator had a terrific idea for your morning coffee, and I just had to test it out.




When you blend 1/4 – 1/2 tbsp of coconut oil in to a hot cup of coffee {leave off the small cap of you blender lid}, you get a creamy coconut latte – dairy free, and the fat in the  coconut oil  keeps you fueled for your morning workout.




{not to mention ALL of the health benefits of this superfood}

Most importantly, it is amazingly delicious!

If you like coconut, you NEED to try this.  It has completely replaced my use of cream or milk in my coffee, and it really does keep me energized for my workout {whether I like it or not}
