Kid Food

has a negative connotation doesn’t it?

I certainly never set out to feed my kids
    kid food




chicken nuggets
corn dogs
pizza
cheese sticks

Not the most nutritious lineup.

BUT…
 the Twinkie up and disappeared
and my children had never even tried one.

I grew up eating Twinkies, Ho-Hos,
not sure about the corn dogs,
but I LOVED frozen dinners:)

Now, we didn’t eat these things ALL the time.
My mother’s mantra

Everything in Moderation

and let’s face it
sometimes kid food is just more fun,
and when made at home,
it  doesn’t have to mean “junk” food.

These mozzarella sticks  are baked and not fried,
and use part-skim cheese sticks
making them skinny {er} cheese sticks,
and they were DELICIOUS!!

The kids loved them SO much, that they didn’t even notice the rest of the dinner was FULL of veggies:)

…and when there isn’t complaining at the table
we all win!

Baked Mozzarella Sticks
recipe adapted from Skinny Taste

12 part skim mozzarella sticks {frozen}
1 large egg
 4 tbsp flour
3/4 cup Panko breadcrumbs
1 tsp Italian seasoning {optional}
2 tsp grated Parmesan cheese

on a small plate lightly beat the egg

place the flour on another small plate

combine the Panko, the seasoning {if using} and the Parmesan

dip each frozen cheese stick in the egg
dredge in the flour
dip in the egg for a second time
roll in the breadcrumbs

{repeat for each cheese stick}

bake on a lightly oiled, foil lined sheet @400 for 4 minutes
turn over
and bake another 4 – 5 minutes

serve HOT with marinara sauce

{the cheese will become rubbery if they get too cold}
