Currently, my kitchen is covered in flour.

Holiday time is a busy time of year. Especially when you have kids with birthdays exactly 2 weeks before and two weeks after Christmas.

Shopping, party planning, decorating, and of course baking. It seems that is all I do this time of year. I spend the better part of my day covered in flour and sugar. Too much sugar if you ask me. I say it every year, I am going to cut back. You know enough is enough when even your stretchy pants are fighting back.

But, no one wants to miss out on all the holiday goodies.

And that is where Born Sweet® Zing™ Baking Blend comes in to play. Zing™ Baking Blend has only 5 calories per serving. It is a mix of stevia leaf extract and pure cane sugar, and bakes and browns just like sugar.

We love coffee cake all year long, but I seem to bake them a lot more around holiday time. It’s the perfect way to end a busy day with coffee cake and a warm drink.  This “skinny” version was a huge hit.  I used Zing™ Baking Blend in  my grandmother’s recipe for classic coffee cake with streusel  (For recipe conversion use ½ as much Zing Baking Blend as sugar (i.e ¼ cup of sugar = 2 tablespoons of Zing™ Baking Blend). For portion control, I baked the coffee cake in muffin tins.

Now I can enjoy all of my favorite holiday baked goods without feeling like I have abandoned my goal of eating better.

  • For the streusel topping
  • 4 tbsp butter, softened
  • ½ cup flour
  • ¼ cup Zing™ Baking Blend
  • 1 tsp cinnamon
  • For the Coffee Cake
  • ¾ cup fat free Greek yogurt
  • ½ cup Zing™ Baking Blend
  • 2 eggs
  • 2 Tsp vanilla
  • 1 ½ cups flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1/3 cup fat free milk


  • Prepare the topping by combining the butter, flour, Zing Baking Blend, and cinnamon – blend until you have a coarse meal (I usually do this by hand)- set topping aside while you prepare the coffee cake
  • To prepare the coffee cake - Blend the yogurt with the Zing™ Baking Blend. Add the eggs and vanilla
  • Sift together the flour, baking powder, and salt. Add the dry ingredients to the wet, and then gradually add in the milk
  • Heat oven to 350 degrees
  • Line a muffin tin with liners or spray with non-stick baking spray
  • Fill tins ¾ of the way, and then sprinkle with the streusel topping
  • Bake muffins for 20 – 25 minutes

This recipe can easily be made into one coffee cake – bake in an 8×8 or 9×9 pan. Reduce the cooking temperature to 325 degrees and bake for 45 – 50 minutes.
