Tomorrow is the first day of summer.
summer = fun in the sun
Summer…sand…water…beachballs!
I found this beachball cookie pizza idea, and I knew I had to try it. We are beach bums for sure. It was too cute!
I decided to go with a {skinny} brownie in place of the sugar cookie crust, and cream-cheese just felt a bit too heavy for bathing suit season, so I frosted my pizza with vanilla Greek style yogurt.
Top with fun fruit stripes and you’re good to go.
For the pizza:
1 recipe of {skinny} brownies (I use Trader Joe’s) replacing the butter/egg with yogurt
spread into a greased pizza pan
bake @350F for 15 minutes
1 – 1 1/2 cups of vanilla yogurt (Greek style works the best)
frost the cooled crust
Fruit in various colors
top your pizza with the sliced fruit (beach-ball stripes)
Easy, breezy summer treat.
Perfect for a day at the beach.
Enjoy!
LOVE all your different fruits! So colorful!
Great version of the traditional fruit pizza! I like how you made it skinny as well! I will pin this and be sure to make it before the berry season is over!
