is perfect for when you just need a little something sweet

You hear about something, and then it is all you can think about.
My 11 year old daughter recently started a blog Stella’s Sweet Tooth {I’d LOVE for you to check her out}
She has so much fun with it, but doesn’t get to post too often because of her busy schedule.Being a 5th grader is hard work you know. But she has been keeping a note book with her ideas in it. She’s come up with this great recipe using blueberry muffins {be on the lookout, it’s coming soon}.
Now all I can think about are blueberry muffins, warm, right from the oven. A little bit of streusel on top; YUM! I really don’t need one, but I have to have one. ONE being the key here. If I make 12, chances are good that I’ll eat, let’s just say more than one.
I made one
in a mug
in the microwave
in 90 seconds
Yep, I’m cool like that.
Ingredients
- Muffin:
- 1/4 cup flour
- 1 Tbsp sugar {I used raw sugar}
- 1/8 tsp baking powder
- 3 Tbsp milk
- 1 Tbsp coconut oil {melted}
- 1/4 blueberries {fresh or frozen}
- Topping:
- 1 Tbsp coconut oil
- 1 Tbsp flour
- 1 Tbsp raw sugar
Instructions
- In a microwave safe mug combine the flour, baking powder, and sugar
- stir in the milk and coconut oil
- place the berries on top
- make the topping:
- crumble together the coconut oil, flour and sugar
- and sprinkle on top of the blueberries
- microwave on high 90 seconds
- cool slightly before removing the mug will be HOT

Stella is well on her way! Sounds like she has got the food blogger brain 🙂 She must get it from her mom, because I LOVE the idea of a mug muffin! I’ve been doing a chocolate version all week, but this version sounds amazing. That crumble – YUM.
I really wish I had some blueberries around, because this is just the afternoon snack I need!

I just tried this. I didn’t have coconut oil so I substituted it for regular canola for the muffin and I used butter for the topping. It didn’t taste anything like a muffin (it was very dense), but it was still very good; it almost tasted like a thick crust pie. I’ll be making this again!
I’m glad you liked it – but I would suggest using butter for the muffin in place of the oil – you will get a more muffin-like taste

This is GENIUS! How do you think it would be with white whole wheat flour?
I bet it would be just as good- yo may need to add just a bit more liquid
What would the baking time be in a tabletop oven at 300 Fahrenheit?
that I really could not tell you, but if I had to guess I’d say about 8 – 10 minutes
I made it tonight with dried mangos and a tb of coconut powder and a tb extra of sugar. I also used unsalted butter instead of coconut oil. The muffin was very moist and sweet, came out fine. It wasn’t dry and bland like the typical muffin I’d buy in the grocery store. I used the tabletop oven at 350 for 25 minutes, about the same time I’d use to bake a dozen, which I will next time, this was a great late night snack.

Has any one tried the blueberry muffin with non wheat flour? I usually use Pamelas baking and pancake mix. Just wondering if it would work. Lots of gluten/wheat free folks out there.

Hmm. Tried to sub honey and it came out more like bread pudding, even after extra microwaving. Don’t recommend subbing out dry sugar for wet. Whoops.

WOAH! I just made the Blueberry Mug Muffin. I did one with frozen blueberries and one with frozen raspberries and they were both extremely tasty. Next time I will probably try using butter in the batter instead of coconut oil and I will also probably increase the quantity of topping by about 50% because that adds moisture and sweetness. But overall, I give this recipe 4 out of 5 stars.

i used granulated sugar bc i dont normally buy ray sugar. the bottom is cooked but squishy and ontop u can definitely tell there was coconut oil in it bc its really runny. doesnt look like ur pic above. any suggestions?
this has happened to me as well -actully it just did a few days ago as I was making this for a video (the coconut oil was pooing on top) and it may just need a few more seconds in the microwave and then let it sit for a bit

I just made this and it came out great! The taste was more of a wet and moist “cake” rather than a muffin. It was too soft and kind of thick for my liking, but it was still delicious. I love how this recipe uses no eggs and ingredients I already have. Anyhow, thanks for sharing this recipe!
Hi, I just tried this recipe and it came great! One thing was that the texture was more of a wet and moist “cake” rather than a muffin feel. It tasted kind of mushy..I suppose that’s normal? Anyways, it was still delicious without the streussel topping. I love how there’s no eggs and I have all the ingredients. Thanks for sharing this recipe!
it definitely is not as dry as a muffin, but with much less sugar I don’t consider it cake. either way I am so glad you enjoyed it

I used blueberries and strawberries together.
I also added cinnamon to the batter. Love the coconut oil but 25g of sugar seems a bit much. I will make again and cut sugar in half. Your thoughts re the sugar?

Wow, I loved it! I tried it in chocolate and with chocolate chips! The only thing is that the crumble sauce topping thing was supposed to be hard but mine was like a glaze. loved its anyway!
