As a kid I never really cared for banana or zucchini bread. I think it was probably because my mom always added lots of walnuts. Now, I could live on banana bread; it’s easily one of my favorite snacks.

Trouble is, I could eat the entire loaf by myself, and my jeans just can’t take that. And, usually I only have one, two at the most, ripe bananas left over. Normally, I slice the last ripe banana and pop it in the freezer for smoothies or Stella’s favorite smoothie bowl [4], but when the craving for banana bread strikes, who am I to ignore it.

This easy banana bread takes less than 5 minutes, start to finish, and if you leave off the chocolate chips makes a delicious breakfast as well as my new favorite afternoon snack.

  • 1 small, very ripe banana, well mashed
  • 1/4 cup flour
  • 1/8 tsp baking soda
  • dash of salt
  • dash of cinnamon (optional)
  • 2 Tbsp butter, melted
  • handful of chocolate chips (optional)


  • combine the banana, flour, baking soda, salt, and cinnamon in using
  • add butter, and blend well
  • top with chocolate chips (if using)
  • microwave on high for 60 - 90 seconds (check after 45-60 seconds)
  • let cool slightly before eating

Because I usually use extremely ripe bananas, I never add sugar to this single serving banana bread, but feel free to add 1 or 2 tablespoons of brown sugar if you are looking for a more dessert-like snack. I find the sprinkle of chocolate chips makes it plenty sweet.

I eat mine right out of the mug, but if you want to easily remove your banana bread from the mug, I suggest spraying the mug with non-stick spray, and mixing the batter in another bowl. I hate to make extra dishes for myself, so I blend everything right in the mug.

Microwaves differ, so your banana bread may need more or less time than mine did. I checked mine after 1 minute and it was still too doughy, so I cooked it another 30 seconds. Watch it closely, there is nothing worse than dry, rubbery, overcooked microwaved banana bread.

I just have to tell you, I am in LOVE with this recipe. Not that I don’t love everything I post, but this is easily one of my favorite recipes, and one I know I will be making ALL the time. If you love banana bread, this is one you need to try.
