Ingredients:
- 2 cups almond flour
- 1/4 cup all purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 Tbsp sugar
- 2 flax eggs (mix 2 Tbsp flax-seed meal with 6 Tbsp water)
- 2 Tbsp coconut oil
- 1 cup almond milk
- 2 tsp vanilla
- 1/2 tsp cinnamon (optional)
Directions:
- in a large bowl, whisk together the flours, baking powder, salt, and sugar
- in another bowl, whisk the flax eggs, oil, milk, vanilla, and cinnamon (if using)
- pour the wet ingredients over the dry, and stir to combine
- let batter rest at room temperature for 10 minutes
- heat a griddle or skillet over medium heat - lightly grease
- pour 1/4 cup batter per pancake, cook until bubbles. appear. on the surface (this should take about 2 minutes)
- flip and cook another minute or two until pancakes are cooked through
