I’m not sure if there is a more basic recipe than that of the meatball. It’s not fancy, or complicated, and are pretty  much loved by everyone. Even my fussy, non-meat eater loves them.

I have been using the same meatball recipe from my 1950’s Betty Crocker cookbook for ages, that is unless I am making my mom’s swedish meatballs; they are great for parties. Meatballs are something I love to keep in the freezer for quick and easy weeknight meals. I make a double batch on Sunday, heat half in sauce for pasta and meatballs subs, and then freeze the rest.

As much as I love classic recipes, these sheetpan turkey meatballs are even better than the original. Baking them in the oven makes then a snap to make, and by switching out Jennie-O ground turkey  for the ground beef, they are as good for you as they are delicious.

Ingredients:

  • 2 lbs ground turkey
  • 1/2 cup panko breadcrumbs
  • 1 1/2 tsp Italian season blend
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp crushed red pepper
  • 1 egg

Directions:

  • preheat oven to 450 degrees
  • place all ingredients in a large bowl, and mix gently by hand
  • shape into meatballs (about 1 1/2 tbsp)
  • place on baking sheet lined with foil or silpat mats
  • bake at 450 for 15 minutes (or until they reach 165 degrees)

To freeze the meatballs, allow them to cool completely, and then pack them in freezer ziplock bags. They can be kept safely in the freezer for up to 2 months.

I almost always make my meatballs using Italian seasoning blend, but for swedish meatballs use  1 tsp nutmeg, 1/2 tsp allspice, and 1/2 tsp onion powder in place of the Italian seasoning and crushed red pepper.

Leftover meatballs are delicious in salads, wraps, and on pizzas. I also love adding meatballs to casseroles and even soup. These sheetpan turkey meatballs really are so versatile, you will want to add them to your weekly meal prep.
