 I don’t like to be the one to bring you bad news, but…swimsuit season is just about upon us.  Actually, I’ll be heading to the beach in just a few short weeks for spring break.   Since January, I have been VERY conscious about my eating and exercise. Things just have a way of heading south after 40, and I m not happy about that.  But, I also happen to love food, and I refuse to feed my family one thing and eat something entirely different.

Making substitutions has been a big part of that. Greek yogurt has been a go-to. Coconut oil as well. These two alone get a workout in my kitchen.   You would never miss the higher fat items that have been replaced.  If it doesn’t taste good, why even bother.

The same with drinks. Typically, I drink water, but ever now and then we will get soda, and the kids just love root beer. The Dr. Pepper Snapple group  has got  4  TEN beverages including 7UP, Sunkist, A&W,  and Canada Dry.  All with only ten calories. I never would have known it was not the full calorie version.

I even decided to cook with the root beer, replacing our Sunday night Beer-Can Chicken with a root beer can  barbecue chicken. It was the best barbecue sauce ever, and with WAY less sugar.




What I love most about grilling a whole chicken, is that on the second night we get a barbecue chicken salad that is one of my favorite meals, and it’s HEALTHY!


Root Beer Can Barbecue Chicken


  • 1 cup of root beer
  • 1 cup ketchup
  • juice of one lemon
  • 1 1/2 tablespoons (packed) dark brown sugar
  • 2 tsp Weber brand Kick'n Chicken {to make your own use 1/2 tsp each of onion powder, garlic powder, crushed red pepper, paprika}


  • Combine all ingredients in a saucepan. Bring to a boil over medium heat, stirring occasionally. Reduce heat to medium-low and simmer until reduced to 1 1/2 cups, about 20 minutes. Season to taste with salt and pepper.

RootBeer BBQ Chicken


To grill the chicken, we placed the bird on the opened  can of A&W, and grilled for about 1 3/4 hours {for a 6 pound bird} We brushed the chicken with the sauce during the last 20 minutes {the sauce will burn, so don’t  do it much sooner }and served the rest at the table.

The leftover BBQ sauce I mixed with a some homemade ranch dressing for our chicken salad. I LOVE a cook once eat twice meal, especially one that is good  for my family.
