Mornings are the BEST during summer break.

My kiddos  love sleeping in, so I usually get a good hour, or two, of work done  {outside,  coffee in hand, it does  not get any better than that}

I’ll check on our little garden, feed the girls, {our babies are getting so big}  make another cup of coffee, and enjoy the silence for a bit. Sometimes, if I’m lucky I’ll get some reading done too.  My nightstand is overflowing with books that I want to read, but just don’t ever seem to have time to read.

By the time the kids get up, we’re all hungry, and since we aren’t rushing out the door, breakfast is our favorite meal. I love making breakfast, probably even more than dessert. There are so many ways to get creative. Pancakes are  Charlie and Stella’s favorite, and today I went ALL IN.  Can you say sugar coma…

 

Peanut Butter Pancakes loaded with Mini Reese's Peanut Butter Cups

Now, I don’t feed my kids candy for breakfast on a regular basis, but summer vacation is a time to relax a bit, let loose, and enjoy. Nothing says enjoyment more than a peanut butter pancake loaded with Reese’s peanut butte cups. Of course that’s only my opinion.

I used my favorite basic pancakes recipe, added some peanut butter to the batter, and then studded the top with mini peanut butter cups. My kids were shocked to see this;  usually their pancakes are full of fruit 🙂  I’m just full of surprises.

They were cooked low and slow like my buttermilk blueberry pancakes so as not to burn the chocolate, and of course we topped them with a few extra chopped cups. What’s a few more gonna hurt?

These pancakes were certainly an indulgent breakfast, but worth every bite. Trust me, you will want to make them.

 

Reese’s Peanut Butter Cup Pancakes

Ingredients

  • 1 1/4 cup of AP flour
  • 2 tbsp sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 2 tbsp melted butter
  • 1 egg
  • 1 tsp vanilla
  • 1 cup milk
  • 1/2 cup of creamy peanut butter
  • mini peanut butter cups

Instructions

  • combine all of the dry ingredients
  • whisk together the milk, egg, and peanut butter {it's okay if there are a few lumps}
  • pour the wet ingredients over the flour
  • add the butter and vanilla
  • whisk just until everything in incorporated {there will be lumps}
  • heat your griddle or skillet to med-low {275-300}
  • butter if needed
  • pour 1/4 cup batter per pancake
  • sprinkle a few peanut butter cups over the top
  • cook until bubble form around the edges, {about 5 minutes}
  • flip, and cook until done {about another 4/5 minutes}
  • serve with chopped peanut butter cups and maple syrup
