Reese’s Peanut Butter Cup Cookie Bark

A few weeks back, when I made brownie bark, I was already envisioning other varieties. I knew that peanut butter cups would HAVE to be involved.
So, when my kids requested cookies for a lunch box treat, the first thing that popped into my head was cookie bark with peanut butter cups.
I used my trusty old Nestle Chocolate Chip Cookie recipe, and made just a few minor tweaks.
{replacing half of the butter with Greek yogurt, and of course replacing the chocolate chips with mini peanut butter cups}
The bark in not quite as crunchy as the brownie brittle, but still delicious, and it’s a fun twist on a classic cookie.
Ingredients
- 2 1/4 cups of flour
- 1 tsp salt
- 1/2 cup of butter {softened}
- 1/2 cup of plain Greek yogurt
- 3/4 cup of sugar
- 3/4 cup of brown sugar
- 1 tsp vanilla
- 1 egg
- 2 cups of halved mini Reese's peanut butter cups
- 4 Reese's peanut butter cups {regular size} chopped
Instructions
- Combine the flour and salt
- Beat the butter, yogurt, sugars, egg, and vanilla until creamy
- Gradually stir in the flour
- Add in the halved mini peanut butter cups
- spread the cookie dough onto a parchment lined cookie sheet {trying to cover the entire pan}
- top with the chopped peanut butter cups
- bake @350 for 15 minutes
- using a knife or pizza cutter - cut into "bark" pieces
- return the pan to the oven and continue baking for another 5 - 10 minutes
- cool and break
You really can never go wrong when Reese’s are involved.
