red velvet hot cocoa brownie in a mug
the title may be a mouthful, but it’s a delicious one
I may not be a big chocolate lover, but every now and then it sure is a nice afternoon pick-me-up.
I made brownies last weekend, and chocolate cookies, and when I went to have one after lunch, they were GONE. My kids are good like that. They can make chocolate disappear like nobodies business. I never even saw them eating, but there it was, an empty pan in the microwave. I’m thinking I may need to find a new hiding spot.
But today I was hoping to find something chocolaty, and we had nothing. I could have eaten the chocolate pie I made for Charlie’s class party, but that would be wrong. I could have baked another batch of brownies, but that would take too long, and I was already really needing that pick-me-up. So I went with my stand-by brownie in a mug.
I used the “healthier” hot cocoa mix I made a few weeks ago, and then with the holidays, and all things red and green, right around the corner I decided to make it red velvet (I opted for a bit less red than usual, if you want a brighter color, add a few extra drops) .
Red velvet hot cocoa is one of my favorite cold weather treats, and this brownie is just as good. And come on, a delicious dessert ready in less than 5 minutes, you cannot beat that.
Ingredients
- 1/4 cup flour
- 1/4 cup hot cocoa mix
- pinch of salt
- pinch of baking powder
- 2 Tbsp butter, melted
- 2 Tbsp buttermilk
- 1/4 tsp vanilla
- 5 - 6 drops of red food coloring (more if you prefer a deeper color)
- handful of marshmallow bits
Instructions
- in a microwave safe mug combine the flour, cocoa, salt, and baking powder, stir to combine well - you do not want any clumps
- stir in the butter, buttermilk, vanilla, and red coloring, you want the batter as smooth as possible
- add marshmallow bits (optional)
- microwave on high 60 - 90 seconds, check after 60 - do not over cook,
- use caution the mug will be hot
- top with whipped cream
Marshmallow bits and whipped cream may be overkill, but I say go for it!
Enjoy

These quick desserts that you can make in a cup will be my wicked end. Sigh. Another delicious one with chocolate no less. I am in BIG trouble.
Could something so simple taste so good? I have to try this and see for myself. Wish me luck! Happy Tuesday 🙂
good luck!
Such a fantastic idea, Heather! I’ve tried red velvet brownies before, but never in the form of a mug dessert. Gotta try this!
thanks Nicola – it was SO good
Umm I could most definitely use this right now!

I love smaller sized desserts, they’re ideal when that craving hits and I don’t want (or need) to commit to a larger dessert. Red Velvet is one of my favorite cakes too! Great recipe.
thanks so much Joanie! I agree, I just LOVE red velvet
The red velvet hot cocoa cake looks scrumptious. I may just have to surprise my daughter today after school with this yummy treat! Thanks for posting.
I do that all the time 🙂 kids are pretty easy to please when brownies are concerned
Mug cakes are the best because I don’t have to worry about overeating!
you know it!
I managed to get through years without once making a “mug cake.” Then I opened my browser and this post was staring at me, enticing me over to the dark side. Worn down by a long day of work with very little sleep the night before, I caved.
It was delicious.
SO glad to hear that! it is one of my faves
This looks amazing! I love that it can easily be made in one serving. I might need to make one of these sometime this week.
I am hooked on single serving treats! thanks alyssa
