My kids have been begging me to make cookies for weeks. Every day I think today’s the day I’ll get the cookies done, and every day 3:30 arrives, and I am off to school pick-up cookie-less. By the time we’re done with sports, homework, dinner, and clean-up I have no desire to mess up the kitchen, so my poor kids are forced to go without dessert.
The Horror
I love mug recipes. Pancakes, muffins, brownies, I’ve even made carrot cake in a mug. So I have no idea why it took me so long to think about making my kids cookies in a mug. In less than 5 minutes I made two red velvet chocolate chip mug cookies, and my kids think I’m a star!
Red velvet isn’t for everyone, but I love it. You get the best of both, chocolate and vanilla, plus it’s red, and I LOVE all things red, especially when Valentine’s Day rolls around. If you have a fear of red food coloring, there are a lot of great all natural brands ( India Tree is the one I use) but keep in mind, the color will not be as bright. You could even try and make your own food coloring (great DIY tips here).
But for the amount of times I make red velvet, I don’t let the food coloring bother me.
Ingredients
- 1 Tbsp butter, melted
- 1 tsp sugar
- 1 Tbsp brown sugar
- 1/4 tsp vanilla
- 3 -5 drops of red food coloring (depending on desired color)
- 1 egg yolk
- 2 tsp milk
- 3 Tbsp flour
- 1 Tbsp cocoa powder
- dash of salt
- 2 Tbsp mini chocolate chips
Instructions
- in a microwave safe mug combine the butter,sugars,vanilla,red coloring,egg,and milk - mix until smooth
- stir in the flour, cocoa powder, and salt
- fold in the chocolate chips
- microwave 45 - 60 seconds (check after 45 seconds)
microwaves are not all created equally, so make sure to check your cookie after 45 seconds, overcooked mug cookies = dry and impossible to chew
Now, for all those times the kids beg for dessert I just need to remember that a mug cookie is only a minute away.

Well, I’m stuck in the house because of the snow, but I have a microwave. AND, all of these ingredients (love that it has nothing warranting a special trip to the store). Looks like it’s cozy town for me!
