Red Velvet Brownies

I LOVE when February arrives.

Logically, I know that January is no longer than the other months.
{well, with the exception of those with 30 days, and of course February}

It just feels so LOOOONG.

January is usually where we have our coldest and rainiest days,
so that may have something to do with it,
but it really is my least favorite of all the months.
{if your birthday is in January – sorry}

So hooray for February

It also doesn’t hurt that today was absolutely gorgeous

Spring is in the air
and Valentine’s Day is right around the corner.

The perfect time for red food if you ask me.
Red is my favorite color after all.

I do enjoy red velvet cake, but the rest of my clan does not,
and that would mean I’d have to eat the entire cake myself
{like I did last year}

I don’t think we’ll go there again.

And…dare I say, I’ve never made anything red velvet from scratch.
This I wanted to try.

You can never go wrong with brownies,
and this recipe produces moist, fudy brownies, with a crackly {that is a word right} crust
just the way I like them.

Red Velvet Brownies
~adapted from Gonna Want Seconds

1 1/2 sticks of butter
4 ounces of chopped dark chocolate
2 cups of sugar
{I know, but trust me it’s totally worth it}
4 eggs
1 tsp vanilla
1 1/2 cups of flour
1 tsp baking powder
1/4 tsp salt
1 1 ounce bottle of red food coloring

preheat the oven to 350
line a square baking dish {9×9} with foil or parchment

in a small saucepan melt the butter and chocolate

in the bowl of a mixer whisk the sugar and eggs {adding one at a time}
whisk in the melted chocolate/butter mixture
add the vanilla
stir in the flour, salt, and baking powder
finally, add the food coloring

pour into prepared pan
bake for 45 – 50 minutes

cool completely before cutting
dust wit powdered sugar
or you could frost them with cream cheese frosting
