Raw Zucchini Salad


This summer I’ve gone a little crazy for caprese.

There was:
 Caprese Pasta Salad
 Caprese Stuffed Tri-Tip
 Caprese Stuffed Tomatoes

Now, I’m not complaining at all, but variety is nice.

Zucchini is  not one of our favorites.
We grew them a few years ago, and they did SO well, we ate squash with every meal for  months.

It took me quite a while before I could even look at one without gagging.

In an effort to eat more local and  in season fruits and veggies, I picked up a few zucchini and summer squash at Farmer’s Market on Sunday.

I remember seeing a beautiful salad of zucchini ribbons – probably on Pinterest.

It was super easy to put together, and I enjoyed it as much as my go-to caprese.

Who knew raw zucchini was so delicious.

Recipe adapted from Three more Big Bites
For the salad:
1 zucchini  (this will serve two) thinly sliced  – a mandoline works best for this
juice of 1/2 lemon
shaved Parmesan
drizzle of olive oil

Place the zucchini ribbons in your serving bowl
squeeze on the lemon juice
drizzle a bit of olive oil
sprinkle with a dash of salt and pepper
finally add on the freshly shaved Parmesan and basil

*make this salad right before you sit down to eat
