Pumpkin {Pie} Cookies


I like to think that I am an organized person.

I don’t forget dates, my kids always have their lunches, assignments and projects are always completed early, I am NEVER late, and I REALLY dislike when things are misplaced.

When I began blogging, I just figured that it would also be very organized.
I even found some adorable blog planners here

I’m always writing down ideas, the problem is that these ideas are scattered about.
I never did bother to print out a planner, and all the recipes I was going to have written, photographed, and tucked away …these simply do not exist.

For someone who is always “early” this is not how I want to blog.

I taught my last writing class of the session this week, and now I’m “off” until the end of October.
My goals:
get a planner
use the planner
stock up on posts

In general PLAN AHEAD

Today, well I just had to wing it.

I found these adorable apple pie cookies on pinterest
Not having apple pie filling, and really  not wanting to make filling, I opted for pumpkin butter, since that was what I had.
{you know how I love to shop from my pantry}

I still plan on making the apple cookies, but these cookies were tasty.
If only it felt like fall outside as much as it smells like fall inside:)


For the cookies:
1 9 inch pie crust (Trader Joe’s is my crust of choice)
3/4 cup of flour
3/4 cup of brown sugar
1/4 cup of butter
1 tsp cinnamon
1/4 tsp nutmeg
1 cup of pumpkin butter or pumpkin pie filling

In a food processor combine the flour, sugar, and spices
pulse in the butter  – until you have small crumbles

remove 1/2 cup of the crumbs
to the remaining mixture add in the pumpkin
pulse until blended

roll out the pie crust
cut in circles {or pumpkins}
fill each with 1 tbsp of pumpkin filling
top with reserved crumb

Bake @375 for about 12-15 minutes
