Seriously, how is it that weekends simply disappear? In all honesty, the weeks tend to pass pretty quickly these days as well, but weekends. Forget it. We go from Friday football to Sunday supper in the blink of an eye.
We had the usual Friday football game, but then had two days with absolutely nothing on the schedule. That does not happen very often. The weather was cooler, we even got rain which was delightful. SO, to ruin things we decided to go house hunting.
In our area of California, that is anything but fun. We have an offer in on a house we absolutely love, but it never hurts to have backup ideas. Things come and go pretty fast around here. Depressing is the only word I can give to describe our hunt. Most of what we love is far too expensive. The rest are dumps. Fingers crossed something works out soon.
In the meantime, I will be shoveling pumpkin chocolate chip snack cake into my mouth to keep myself from going insane waiting for the Realtor to call with good news I hope.
This cake could not be any easier to make; you mix and bake it all in one pan. It is delicious on it’s own, but crazy good covered in chocolate sauce. Or, you could take it one step further and add a scoop of vanilla ice cream with the chocolate sauce. Nuts and whipped cream… Why not, it’s Monday after all, and we all could use some cheering up on a Monday.

pumpkin chocolate chip snack cake
Ingredients:
- 1 1/2 cups flour
- 3/4 cup brown sugar, packed
- 1 tsp baking soda
- 1/4 tsp salt
- 2/3 cup pumpkin puree, not pumpkin pie filling
- 6 Tbsp butter, melted
- 1/3 cup buttermilk
- 1/2 cup chocolate chips
Directions:
- preheat oven to 350 degrees
- in an 8 x 8 square baking pan, combine the flour. sugar, baking soda, and salt
- stir in pumpkin, butter, and buttermilk
- make sure to get into the corners, and stir just until everything is combined
- scatter chocolate chips over the top
- bake 30 minutes
- cool in pan
- serve plain or covered in chocolate sauce with chopped nuts
When the cake came out of the oven, I spread the melted chocolate chips across the top to form a frosting, but you could certainly leave them alone. I just love a little bit of chocolate with every pumpkin bite.
Cake doesn’t have to be a weekend only affair. This pumpkin chocolate chip snack cake is easy enough for a grey and drizzly Monday afternoon.

Do you have to use buttermilk?
no, you could use regular milk, but I might suggest adding a small amount of greek yogurt to the milk. I love the moisture it adds to the cake. and it does add just a bit to the rise of the cake.
