cheers to the weekend! are you a repeat eater? i am for sure. when i find something i like, i stick to it. for maintaining weight loss, it has really worked for me. breakfast is almost always yogurt, granola [4], and berries. then, my sister reminded me that life is too short not to eat pancakes. and i love my pancakes [5].

i recently joined a beachbody challenge group. my normal gym routine was getting boring, and i needed a change.  i want to get the most out of my challenge group. i committed to 30 days by the book, and that includes the eating plan. naturally pancakes do not make the cut.

but it’s the weekend, and i love pancakes.  i started with my weight watchers 0 point pancake recipe [6] and added more protein to fuel the workouts. the almond flour gives them more of a true pancake feel, and the flax boosts the nutrition.

the banana adds sweetness without a strong banana flavor (for those that don’t like bananas).  i always use vanilla and cinnamon for pancakes; you could also add cocoa powder or peanut butter powder.

what i love most about these protein pancakes is that i can have 3 pancakes topped with berries and not feel guilty about over indulging on the weekend.

  • 4 large eggs
  • 1 banana
  • 1/2 cup almond flour [8]
  • 1 Tbsp flaxseed meal [9]
  • 2 tsp baking powder
  • 1 tsp vanilla extract (optional)
  • 1/2 tsp cinnamon (optional)
  • 1/2 tsp salt


  • heat a skillet or griddle over medium-low heat, grease
  • place all pancake ingredients into a blender, and blend until smooth
  •  use 1/4 cup batter for each pancake, pour onto griddle and cook until bubbles appear on the surface, flip and cook until the centers are fully cooked
  • serve immediately with berries, almond butter or maple syrup

how to make the best protein pancakes

for sweetness, use very ripe bananas….read the blacker the better.

blend your ingredients well. you really want to use a blender here. your batter should be silky smooth.

grease your pan or griddle to ensure the pancakes do not stick.

cook low and slow. medium – low heats works best. the centers will be fully cooked without the tops and bottoms getting too brown.

serve your protein pancakes topped with fresh berries, some almond butter, and if your sweet tooth wishes, some maple syrup.
