Pizza with Strawberries, Arugula, and Goat Cheese

Yesterday we picked our first berries from the garden; that’s always exciting.

My first thought was to whip up some strawberry shortcake to celebrate, but we’ve enjoyed quite a few desserts lately.
Then, I found a pizza recipe at Cooking Light.
But it looked delicious
I had to try it
Friday is pizza night
Oh my goodness….berry heaven
Honestly this was the BEST pizza I have ever eaten
AND…it’s SO easy!
Use 1 recipe of pizza dough (I used my base recipe but used 1 cup of wheat flour to replace 1 cup of AP flour – I also added just a small drizzle of honey)
roll out and bake @425 for 8 minutes
combine 1 cup of sliced berries with 1 cup of arugula (any green would work)
toss with 1/2 tsp lemon juice and 1/2 tsp olive oil
add a dash of salt and pepper
top the baked crust with 1/3 cup of crumbled goat cheese
the berreis and arugula
and top with 1/4 cup of shaved Parmesan cheese
