Well, I made it. Stella’s birthday is over and I survived a slumber party with a very rowdy bunch of teen aged girls. Stella had a wonderufl time, so of course the noise was worth it. After the party, I had grand plans to do a bit of holiday decorating yesterday, but we were all exhausted. Instead, we lit a fire, curled up on couches and pretty much lazed the day away. It was just what we all needed, but the with Christmas  less than 2 weeks away, the decorating needs to happen soon.


peppermint dark chocolate mousseThis peppermint dark chocolate mousse is so easy it’s the perfect lazy day dessert. A few minutes of prep, 30 minutes of chill time, and voila. A delicious light and airy mousse full of smooth dark chocolate and peppermint flavor festive enough to be served after any holiday dinner.

So even when you don’t have the energy to make the house festive, you can still have a festive dessert by the fire, which is exactly what my plan is.

1 envelope of unflavored gelatin
  • 1/4 cup cold water
  • 1/3 cup boiling water
  • 1 cup sugar
  • 2/3 dark dutch processed cocoa
  • 2 cups heavy whipping cream (plus more for whipped cream topping-optional)
  • 2 tsp peppermint extract


  • sprinkle gelatin over cold water, and let soften (2 minutes)
  • add boiling water to gelatin, stir to dissolve and let cool slightly
  • in a stand mixer beat the sugar, cocoa, cream, and extract until stiff (you may need to scrape down the sides and bottom from time to time)
  • pour in the gelatin and blend well
  • spoon into dessert dishes, cover, and chill at least 30 minutes
  • serve topped with whipped cream and crushed peppermint candies

Ever since I made these dark chocolate crinkle cookies [5], I have been addicted to dark dutch cocoa, but this mouse is just as delicious using regular cocoa powder. If  you’re not a big fan of peppermint use vanilla or even almond extract. I’ve even made this with caramel extract, and it is delicious!

Of course around the holidays I cannot get enough chocolate and peppermint, and this mousse is so easy I think it will be regular guest at our dinners this  holiday season.
