Pecan Pie Bread Pudding
all the deliciousness of pecan pie
no crust needed
As a kid I was never really interested in pecan pie. It was always my dad’s favorite, but I never could understand how nuts and a LOT of sugar equaled pie{and mincemeat – definitely NOT pie in my book}
No chocolate
No custard
No fruit
NOT pie.
I had never even tried it until after I was married. My mother in law is an over-baker. Even before any of us had children, and there were only 7 or 8 at the dinner table, there would be three or four pies at least. For Thanksgiving and Christmas there would be Apple, Pumpkin, Chocolate Silk, and some variation of Pecan.
For me it was love at first bite. All these years I had been missing out.
But, you know how I feel about crust.
I. JUST. CAN”T. DO. IT.
Someday, I’ll walk through Dorothy’s step-by step, and maybe my fear pf pie crust will disappear.
For now I’m skipping the crust, and using chocolate brioche instead.
Ingredients
- 6 cups of day old bread {I used chocolate brioche}
- 1 1/2 cup of pure maple syrup
- 1/4 cup of brown sugar
- 3 eggs
- 4 tbsp butter {melted}
- 1 tsp vanilla
- 1 1/2 cups of halved pecan
Instructions
- generously butter a 9x13 baking dish
- pre-heat the oven to 375
- cube the bread and add it to the baking dish
- add on the pecans
- whisk together the syrup, brown sugar, eggs, butter, and vanilla
- pour over the bread cubes and pecans
- bake at 375 for 40 minutes
Is it just me, or is bread pudding VERY similar to baked french toast? and doesn’t that make this a suitable breakfast?
Nuts, eggs, maple syrup, bread…sounds like breakfast to me

I’m all for over baking! One have only one dessert?? I have never tried bread pudding. But I’m afraid I am missing out on something wonderful, especially after seeing this dessert!
