peanut butter truffle cookies

I have been making these peanut butter truffle cookies for years, and they always seem to disappear almost immediately.
I first posted this recipe in 2013, when the blog was pretty new, and since I make these cookies all the time, I thought I would update the old photos.
Have you started your holiday baking? When I was a kid, my mom, sister, and I used to spend every weekend in December baking for Christmas. Cutouts were always a favorite, but for eating I LOVED my mom’s hello dollies aka 7 layer bars.
Now that I have to do the cleanup, I would love to skip the cutouts, but of course they are Stella’s favorite, and she is quite the artist. I don’t make 7 layer bars because my kids will not eat nuts or coconut and I do not need an entire pan for myself. We make gingerbread men, and thumbprints, and dozens of chocolate chip. I love flourless cookies like these hot cocoa cookies and peanut butter kiss cookies.
But for ease, you cannot beat these peanut butter truffle cookies. They can be done in less than 30 minutes from start to finish. Using a cookie scoop makes them even easier, but is totally not needed. One bowl and a spatula plus a few pantry staples are all you need.

peanut butter truffle cookies
Ingredients:
- 1 cup of organic, natural creamy peanut butter
- 1 cup of brown sugar
- 1 large egg
- 1 tsp baking soda
- 1/2 cup of chocolate chips
Directions:
- preheat the oven to 350
- line a baking sheet with parchment paper
- in a large mixing bowl combine everything except the chocolate chips
- gently fold in the chips
- drop by tsp onto the baking sheet
- bake 10 minutes ** allow the cookies to cool completely before you remove them from the pan they will crumble
But if you want to have some left for Christmas, you’ll need to double or triple this recipe. They disappear FAST.
enjoy!
These are amazing Heather! And your kids would get along just fine with Jordan…
well then maybe they can cook for each other:)I’m getting frustrated
These sound wonderful!

I’m going to look up that book. It may be good for my girlfriend–her son just turned two. He won’t eat meat, but loves veggies..for now.
I just checked it out on amazon…i don’t know if it’d be a worthwhile purchse since he’s already 2. That 2-3yo chapter is at the end of the book.
try petit appetit Eat, Drink, and Be Merry (her second book) LOTS of choices
Thanks!
also..every time I click your pin it button, i get a blank pin screen–no photo, description box isn’t filled out…I have to click the pin it in the tool bar for me to pin things from your blog. Is it me or you? 😉
no – working on it:)
And thanks!

Hi Heather – I would totally come over and help you eat those 7 layer bars. Just sayin’. But these peanut butter truffle cookies? Oh. My. And I can’t believe how few ingredients! So tempting.
I’ll keep that in mind 🙂 not that I couldn’t eat the entire pan, but I know I should share
Beautiful photos! I’ll bet these are delicious!
thank you!
This is my kind of cookie! What’s not to love about chocolate and peanut butter!?
they really are hard to resist
These cookies look incredible! I can’t resist peanut butter cookies!
I never used to be a fan, but am totally coming around
These are ⭐⭐⭐⭐⭐
These are great because my daughter and I try not to eat gluten, plus we love peanut butter! I love the fact that they are so easy to make and clean up is a breeze. Since there are just two of us, I freeze the balls and only bake 4 at a time. We have no willpower when it comes to these cookies.
If you don’t have chocolate chips on hand, these can be made without them. Just don’t flatten them like you would if you were making regular peanut butter cookies.
You will not be disappointed with these and may wish you never tried them.🥴
