it’s friday! we made it through another week.  to celebrate let’s have cake. no big fancy layer cakes that take hours to bake, frost, and decorate. although, some day i really do plan to up my cake decorating skills. today is not that day. today is the day for a super easy peanut butter banana chocolate chunk snack cake. no frosting skills needed.

i don’t know how it happens. i’m up before 6 every day. out the door by 7:30 for school drop-off. back home by 8. the next thing i know it’s 3 and time to do the pick-up. every morning i wake up with the best of intentions. tackle my workout, work, and the house “stuff” with plenty of time leftover to have a snack ready for after school.

how often that actually happens….not very.

i am the type of person that  is much happier after a workout, so that i try not to miss. no one likes crabby momma. then, i try to balance work work with house work. i can’t tell you how many times i find laundry sitting in the washing machine with no idea as to how long ago it was washed.  its safe to say i don’t balance all that well.

but after complaints for the last three days that there is nothing in the house to eat, today i made sure there was.

  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 large egg
  • 4 Tbsp butter,melted
  • 1/2 cup buttermilk
  • 1/2 cup smooth peanut butter
  • 2 large bananas, mashed
  • 2 tsp vanilla extract
  • 1 cup dark chocolate chunks


  • preheat oven to 350°
  • grease a square baking pan 8x8 or 9x9
  • line pan with a parchment sling
  • in a large bowl whisk together the flour, sugars, baking soda, baking powder, and salt
  • in another bowl whisk together the egg, buttermilk, peanut butter, bananas, butter, and vanilla util smooth
  • pour wet ingredients over the dry, and mix until everything is combined
  • fold in the chocolate chunks
  • pour batter into the prepared pan and bake 30-40 minutes - a pick inserted into the center should come out clean (8x8 pan will take 35-40 minutes - my 9x9 took 30 minutes)
  • cool in pan, then lift out and cut into squares
  • dust with powdered sugar before serving (optional)

there are so many things i love about snack cakes. first, they are ridiculously easy. this one took me just an under hour start to finish. snack cakes do not require frosting, although you could totally top this with chocolate or peanut butter frosting. it didn’t even really need powdered sugar, but hey it’s the weekend. celebrate a little.

frosted layer cakes seem a bit too fancy to be eaten as a snack. imo they are special occasion desserts. snack cakes are super casual and perfect for afternoon snacking at the kitchen counter.

the only drawback to this peanut butter banana chocolate chunk snack cake…it’s addicting. if you’re like me and grab a bite every time you pass by said counter, you’ll be spending a bit more of your weekend at the gym.
