If you’ve visited the blog more than a few times, you probably already know that I am obsessed with breakfast. Obsessed!

If it wasn’t for Ian, the kids and I would probably eat breakfast for dinner every night of the week. Well maybe not on taco Tuesday. We’re also obsessed with tacos and enchiladas.

But every other night it would be on.

I used to be all about the eggs and bacon. Maybe it’s because Stella doesn’t really like them, but we make way more pancakes and waffles than eggs around these parts.  I get it though, it’s hard for eggs to compete with s’more pancakes or chocolate and peanut butter waffles. 

SO usually when I think about breakfast, or breakfast for dinner, it is pancakes and waffles that I go to first.

Stella has been on a banana kick lately. She eats one or two a day, almost every day. That is until I bought an extra large bunch. Now they sit getting brown on my counter, and she has moved on to apples.


I cut a few of the over-ripe bananas up to freeze for smoothies. I made a loaf of banana bread, and then got an idea for peanut butter and banana pancakes.   • 1 cup flour
  • 2 Tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 ripe banana, well mashed
  • 1 1/4 cups whole milk
  • 1 egg
  • 1/2 cup creamy peanut butter
  • 2 Tbsp melted butter
  • 1 tsp vanilla
  • 4 slices of bacon, cooked and crumbled


  • heat a griddle or skillet over medium heat
  • combine the flour, sugar, baking powder, and salt
  • whisk together the banana, milk, egg, peanut butter, butter, and vanilla
  • pour wet ingredients over the dry, and whisk only until combined, batter should still be lumpy
  • pour 1/4-1/3 cup batter per pancake and sprinkle on  crumbled bacon
  • when the edges begin to dry and the top is dotted with bubbles, flip (about 3 minutes)
  • cook until golden and cooked through (about another 2 minutes)
  • serve hot topped with crumbled bacon, banana slices, and maple syrup
