peanut butter and jelly yogurt parfait

i have been completely obsessed with the peanut butter and jelly granola i made a few weeks ago. it’s dangerous to keep in the house; i find myself sneaking handfuls throughout the day. even the kids love it, and usually they are not big on granola. but stella has a bowl with milk practically every afternoon after school.
if i’m not eating it by the handful, i’m adding it to my morning pancakes or yogurt. this peanut butter and jelly yogurt parfait is one of my new favorite breakfast treats. greek yogurt and homemade peanut or almond butter add protein. i don’t know about you, but i need to eat protein in the morning or i find myself hungry long before lunch. homemade strawberry preserves add just the right amount of sweetness, and the peanut butter and jelly granola adds a delicious crunch.
peanut butter and jelly yogurt parfaits
- 1 cup greek yogurt
- 4 tbsp nut butter
- 4 tbsp fruit preserves
- 1/4 cup peanut butter and jelly granola
- fresh berries
- spoon 1/4 cup yogurt at the bottom glass
- top with 1 Tbsp nut butter and 1 Tbsp fruit preserves
- add another layer of yogurt followed but nut butter and preserves
- top with granola and berries
this peanut butter and jelly yogurt parfait is more of an idea and less of a recipe. in the morning i use only about 1/2 cup yogurt for the parfait. for lunch i use more. the kids don’t even bother measuring. simply layer your yogurt, nut butter, jelly and repeat. top it off with peanut butter and jelly granola and more berries. voila.
