Peanut Butter and {jelly} Pancakes

Today is national pancake day; I bet you didn’t know that.

I did either until about an hour ago.

Needless to say we did not have pancakes for breakfast.

No worries; we’ll make breakfast for dinner!

We happen to LOVE breakfast for dinner, well at least most of us.

When I make breakfast for dinner, I like to try something a bit different, more substantial.

I instantly thought of a recipe that I had tried for pb&j waffles.

These were a HUGE hit with the kiddos. Who wouldn’t love  hearing {you are the best cook ever}

Since we had waffles for breakfast, and it is not national waffle day…
do waffles even have a day?

I decided to try it with pancakes.

Another BIG winner – if I do say so myself!

For the pancakes:
1 cup of flour
1 cup of milk
1 egg
2 tbsp butter melted
2 tbsp sugar
1 teas baking powder
1 teas  vanilla
1/2 teas salt
1/2 teas cinnamon (optional)

Pre-heat the griddle to 350
combine all of the dry ingredients
whisk together the egg, milk, butter, and vanilla
add to the dry ingredients
do not over mix

Cook pancakes

Spread each with peanut butter (or any other “nut” butter you like)
top with banana slices
add berry sauce – cook 1 cup of berries (we use a mix) with 1/4 cup sugar and a little bit of water for about 10 minutes
sprinkle with powdered sugar
finally it’s syrup time
