We are right smack in the middle of Back to School Week, and SO many great tips, crafts and recipes have already been shared.

{not to mention all of the fabulous prizes}




The school year for us has been  a very smooth transition. I’m not sure what I expected, but it has been wonderful.The toughest part of the day…homework time. I LOVE to get things done right away so that we can enjoy the rest of the evening worry free.  My kids however have other plans,  involving FOOD,  and lots of it.  They both come home from school starving.  It’s almost like they don’t eat any of the lunch I pack for them.

I wonder…

Anyways, I need to have the food ready as soon as they walk in the door.

The shoes are flung

The backpacks are flung

Papers are flung

and if I don’t have something prepared, they will help themselves to whatever they find first.

{you and I both know they never find the veggies first}

These peanut butter and jelly bars keep them full and happy until dinner, and they make great lunch box snacks as well.

Peanut Butter and Jelly {gluten free} Grain Bars


  • for the jelly:
  • 1 pint of raspberries
  • 1/3 cup of sugar
  • 1 tbsp cornstarch
  • For the bars:
  • 1 cup of gluten free oats {processed into flour}
  • 3/4 cup almond flour
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 1/3 cup of peanut butter
  • 2 tbsp Greek yogurt {plain}
  • 1 egg
  • 1 tsp vanilla


  • In a medium saucepan combine the berries, sugar, and cornstarch
  • bring to a boil
  • reduce the heat {stirring occasionally}
  • simmer until the jelly thickens 5 - 10 minutes
  • remove from the heat and cool slightly
  • To make the crust:
  • combine all of the dry ingredients
  • cream together the peanut butter, yogurt, egg, and vanilla
  • stir in the dry ingredients
  • divide the dough into two balls
  • roll each in a square
  • press one square into a parchment lined square baking dish
  • spread the jelly over the bottom crust
  • carefully lay the top crust on jelly
  • bake @350 for 17 - 20 minutes
  • cool completely before removing from the pan and cutting
  • makes 12 - 16 bars
